As soon I found Erewhon Gluten Free Brown Rice Crisps at the PCC in Fremont, I knew I had to make Rice Crispy Treats. I made some for a fundraiser and thought I'd actually take a picture this time and share my recipe. I also experimented a bit this time and added half a disk of Taza Cinnamon Chocolate to the batch on the left.
1 box of brown rice crisp cereal
optional desired amount of dark chocolate
Line a 9x11 rectangular pan with parchment paper. (I ran out so I used tin foil.)
Pour the brown rice crisp cereal into a large bowl.
If not using chocolate, melt the butter and the marshmallows together in a medium sauce pan.
If using chocolate, melt the butter and the chocolate together in a medium sauce pan and then add the marshmallows and melt together.
Pour the marshmallow mixture over the brown rice crisp cereal and mix together. I use a silicon spatula to make it easier.
Pour rice crisp and marshmallow mixture into lined pan and press down.
Set aside to cool.
