This was one of my favorites growing up and on a whim one morning I decided to see if it could easily translate to a gluten free and cows milk free version and it worked delightfully well!
1 cup King Arthur All Purpose GF Flour Mix
1/2 tsp xanthan gum
1 cup almond milk
1/2 cup butter
Preheat the oven to 425 degrees F.
Place a 12 inch cast iron skillet in the oven with the butter, allow to melt.
In a large bowl, use in immersion blender to blend the eggs for about a minute.
Add the almond milk and flour and blend until smooth.
After the butter has melted, carefully remove the hot skillet from oven.
Pour the batter into the skillet and place back into the oven.
Bake for 20-25 minutes until edges are brown and center is firm.
Serve sprinkled with powdered sugar.
