Spinach & Blood Orange Salad with Avocado Dressing


2 large handfuls spinach leaves, washed and whirled in a spinner to dry them
2 small blood oranges, peeled and cut into small chunks
1 small avocado
2 tbsp olive oil
salt and pepper to taste


In a small bowl, mash the avocado. 
Add the olive oil, salt, and pepper to the avocado and mix together.
In a medium bowl, combine the spinach leaves with the avocado mixture and massage the dressing into the leaves.
Add the blood oranges, toss, and serve!
