Gluten Free & Fresh: Week 15


Excuses, excuses... I got rocked with the flu this past week and took a short trip to California so photos of all this yummy food is missing yet again.  Luckily, I see a couple months on the horizon where I will be working only 8 hours a day at my "day" job, meaning I'll have more time to cook and be creative.  I'm especially excited to continue working on my Fig Newly (read: newton/cookie) recipe that I started experimenting with last month because I just got a new rolling pin!  On to this week's goodies;

 

Carrots and Celery were cut into sticks and eaten with peanut butter.

Lacinato Kale was blanched and placed on top of a pizza.

Fingerling Potatoes were chopped, boiled, then placed in a pan with some olive oil and chorizo to make a taco filling.

Honey Crisp Apples, Bartlett Pears, and Pulots were eaten as snacks.

Beets, Red Leaf Lettuce, and Green Onions will be used in a salad.

Any ideas on what to do with the Leeks and Delicata Squash?
