I'm still loving the whole grain muffin recipe from Gluten Free Girl & the Chef.
Here's what I substituted;
Almond Milk for Buttermilk
Olive Oil for Grapeseed Oil
Here's what I added;
2 medium shredded zucchinis (from last week's produce delivery)
3/4 cup cacao powder
Simple changes and adjustments for a delicious and chocolatey treat, which I found was much tastier chilled than hot out of the oven.
This weekend I'm headed to Portland and it will be my first time going just for fun. I'm looking forward to trying some new restaurants and going back to some of my favorites that I wrote about here and here. And I'm also planning to try some new places, so stay tuned!
