Gluten Free & Fresh: Week 13

I totally failed to take a picture of all of our produce delivery we received this week. We got back from our trip to Washington DC (more on that later) on Monday afternoon and then I proceeded to work long hours.  When our box was delivered I actually forgot about it for a whole day and half and then hurriedly shuffled things into quick meals or to the fridge.

Please accept the above photo of the Grinnell Glacial Overlook in Glacier National Park instead of my normal produce photo.  I'll do better on Week 14!

Yukon Potatoes  were used in a baked potato cheese soup.

Sweet Corn  and Red Onion was used in a simple risotto.

 were topped with coconut milk whipped cream with a bit of lemon juice in it.

Gala Apples  and Pluots were eaten plain.

Butter Lettuce, Gypsy Sweet Peppers, and Slicer Tomatoes were tossed with some goat cheese, black beans, and tortilla chips for my hubby's dinner.

Spinach will be cooked up on a pizza.

Carrots were used to make juice.

We're still working on what to do with the CabbageCauliflower, and Green Beans.
